APPLE CRISP (vegan friendly)

This recipe is super simple and super delicious!

For the apple filling mix together:
4-5 large apples, diced.  (you can peel if you wish)
2 Tbsp maple syrup
2 Tbsp coconut sugar
2 tsp cinnamon
1 tsp vanilla extract
dash of nutmeg

Place the apple mixture in a greased 8x8 pan.  I sprayed it with coconut oil.

Then mix the crumble together:
1 1/2 cups old fashion oats
3/4 cup whole wheat flour
1 1/2 tsp cinnamon
1/2 tsp salt
1/4 + 1/8 melted coconut oil
1/4 + 1/8 maple syrup

Top the apples with the crumble mixture.

Bake at 350 for about 40 minutes.  ENJOY!!

OREOS (Raw & Vegan!)



For the Cookie:

1 cup almonds
1/2 cup cacao powder
1 cup medjool dates (pitted)
1/4 cup maple syrup
water for consistency

For the Cream filling:

3/4 cup cashews
1/4 cup water
2 tablespoons melted coconut oil
2 tablespoons maple syrup
1/2 tablespoon vanilla extract
dash of sea salt




DIRECTIONS:

1st: Make the cream filling.  You may need to scrape down the sides a few times.  Then put in refrigerator to harden.

2nd: Blend the almonds 1st.  Then add in cacoa.  Blend.  Add the rest of the ingredients, scraping down the side when needed.  Add water 1 tablespoon at a time, if necessary. 

3rd: Make tablespoon size cookies and place on parchment paper. Place in freezer to harden.

4th: After about 15-20 minutes, place filling on one side of the cookie, top it with another cookie.  Finish the batch and place cookies back in freezer to harden.

5th: After about 20 minutes, ENJOY!!!

"NO TUNA" SALAD


  • 15-20 oz chickpeas, rinsed and drained (kind of smashed up)
  • 1/4 cup tahini
  • 2 teaspoon Dijon or spicy brown mustard
  • 1 tablespoon maple syrup or agave nectar
  • 1/3 cup diced red onion
  • 1/3 cup diced celery
  • 1/4 cup diced pickle
  • 1 apple, diced
  • Salt, Pepper, paprika to taste
Mix all ingredients together.  Eat as is or enjoy as a sandwich!!

CHOCOLATE FRUIT DIP & COCONUT FRUIT DIP (Vegan Friendly)

Both of these dips are AMAZING and seriously will be gone in a heartbeat...whether you are making it just for yourself or for a gathering, everyone will love them!  

Chocolate Fruit Dip
Put all ingredients in a blender (may need to scrape it down a few times) & blend until smooth!
2 avocados
1/2 cup to 3/4 cup maple syrup
2/3 cup unsweetened cacao powder
1/2 tablespoon vanilla extract
1/4 tsp salt
3 tablespoons almond milk

Coconut Fruit Dip
Refrigerate 1 can of coconut milk overnight.

The next morning, scrape out the thick cream on top & place in a blender with 2 tablespoons maple syrup and 1 tsp vanilla extract. 

Blend until smooth (may need to scrape it down a few times).



ENJOY both dips with your favorite fruit!!  Seriously this is going to be my go to thing to bring to parties this summer!!

80 Day Obsession Transformation

80 days.
I really didn’t think I was going to make it.
By NO MEANS was I 100% on point. I had my cheat meals…I added in a run here & there (…when it wasn’t snowing out!)…I had a cocktail occasionally.
The program was 100% outside of my comfort zone.
***Bands…sliders…what??!
I am used to non stop, crazy, high intensity workouts. This was a change of pace for me. It humbled me bc I thought it really wasn’t going to be a program I would connect with or challenge me enough.
At times, I did not enjoy it. But I am glad others convinced me to stick with it.
***I lost 5.25 inches.
***I lost 6.6 pounds.
I gained strength.
I gained confidence.
I believed I could complete certain moves that I haven’t been able to do before.
I am sleeping better

My skin is clearing up.
This proves that there is ALWAYS room to make progress in your life…physically…mentally…spiritually.

RANCH DRESSING/DIP (vegan)

Mix together:

1 cup vegan mayonnaise
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp black pepper
1/4 cup chopped parsley
1 tbsp almond milk if you wish (for consistency)

That is it!!  Use it as a dip or a dressing.  Enjoy!

FROZEN YOGURT

This is probably one of our GO TO after dinner treats!!

Super simple to make and you can alter it based on your taste buds.

This picture is the Cherry and Chocolate "Frozen Yogurt" Version...
Blend together:
4 medium frozen bananas
1 cup frozen cherries
1/2 tsp vanilla extract
1 - 2 tbsp almond milk (till you get the consistency you want)

Place in a bowl and top with some vegan chocolate chips.  THAT'S IT!!

You can alter it with different frozen fruit...adding cinnamon...adding PB...adding cocoa powder.  GET CREATIVE AND ENJOY!!

BANANA BREAD BITES


  • 2 ripe bananas
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • pinch of sea salt
  • 2 Tbsp ground flaxseed
  • 2 Tbsp almond butter (or any nut butter)
  • 2 Tbsp honey or maple syrup
  • 2 Tbsp olive oil
  • 3/4 cup oat flour
  • 1/4 cup almond flour
  • 1/2 cup oats
  • handful of raisins and/or chocolate chips

  1. In a large bowl, mash the bananas then add baking soda, baking powder, salt, flax seed, nut butter, honey, olive oil.  Stir until well combined.
  2. Add in oat four and almond flour.  Stir in oats, raisins/chocolate chips.
  3. Refrigerate while the oven heats up to 375.
  4. Scoop batter onto the baking sheets lined with parchment paper or a non stick silicon baking mat. Push down slightly.
  5. Bake for 10-12 minutes.

SWEET POTATO PIZZA CRUST

For the Crust:

3 medium-large sweet potato, baked and skin removed (I used my insta pot and it was so fast!)
2 cup oats, ground in a ninja blender or coffee grinder
3 Tbsp olive oil
1 1/2 tsp salt
2 tsp black pepper
1 tsp red pepper flakes2 tsp. garlic powder
2-3 Tbsp pizza seasoning
Coconut oil, to grease cast iron

(Adjust quantities based on how big your pan is!)














  • Blend all ingredients together until smooth in a food processor or Ninja Blender.
  • Smooth out the crust ingredients into the oiled cast iron pan till it is about 1/4-1/2 inch thick.  Bake at 400 degrees for 15-20 minutes, then flip and back for another 15-20 minutes.
















  • Spread sauce on top, then cashew parmesan cheese , then vegan cheese.  We use a cashew nut cheese that tastes ridiculously good!
  • Put back in oven until warmed up and cheese melted.  ENJOY!!

3 DAY REFRESH RESULTS

3 day refresh and Im feeling like myself again. I was in a bitchy mood simply because I knew I was off from all the crap food I ate and wine I drank!

RESULTS... 
DOWN 5 pounds
DOWN 2.5 inches off my stomach
DOWN 1.5 inches off my hips
DOWN1 inch off my chest.

Thankful that I can enjoy the holiday season and get right back on track!
