BEAN SALSA

This is the simplest bean salsa you will ever make!  Serve with pita chips, veggies, sweet potato chips...throw it on top of a salad...whatever you want!  OR just get a spoon and dive in!

Mix together 1 tablespoon balsamic vinegar, 1 tablespoon olive oil, and 3 tablespoons greek yogurt. Then add in:
1 can black beans, drained and rinsed
1 can kidney beans, drained and rinsed
1/2 red onion finely diced
1 avocado cut in chunks
2 tomatoes cut in chunks (I take the seeds out so it does not become liquidy)
2 cups frozen corn that is thawed and drained

Mix gently and season with salt and pepper.  ENJOY!!

PROTEIN BITES

Mix together:
1 cup oats
1/2 cup ground flax seed
1/2 cup crunchy peanut butter
1/3 cup honey
2 tbsp chia seeds
2 tbsp melted coconut oil
1 tsp vanilla

You can add chocolate chips if you would like OR for lower calories....after the bites have been refrigerated/in the freezer, mix together 2 tbsp melted coconut oil, 1 tsp vanilla, and 3 tbsp cocoa powder.  You can add some powder sugar if you want to.  Then drizzle on top as seen in the pictures and put back in refrigerator until ready to devour!!
