SIMPLE GRANOLA BARS

2 mashed up bananas
1/2 cup peanut butter
2 1/2 cups rolled oats
2 tbsp chia seeds
3 tbsp maple syrup
1 tbsp cinnamon
dash of nutmeg
1 tsp vanilla
1/2 cup vegan chocolate chips (or your choice!) (or raisins)





Mix all ingredients together.  Place in an 8x8 pan and bake for 20 minutes at 350 degrees.  
Let cool then cut into 16 squares.  You can top with melted chocolate and unsweetened coconut flakes if desired!

No sugar, no oil, no flour, no butter...just pure goodness!! ENJOY!

PUMPKIN GRANOLA BARS

Brought to you by The Nutty Scoop...and tweaked a bit by me : )

1 cup rolled oats
1 cup pumpkin puree
1/2 cup peanut butter or almond butter
3/4 cup honey or maple syrup
1/4 cup dark chocolate chips (I use the vegan kind)...or use dried fruit!
1/3 cup pumpkin seeds
2 tbsp chia seeds
1 tsp cinnamon
3 tsp pumpkin spice

1. Preheat your oven to 350 and line a 8x8 pan with parchment paper. set aside.
2. Mix everything in a bowl, transfer to the prepared baking pan and flatten it out with the spatula.
3. Bake for 25 minutes.  After you can put some extra chocolate chips on top to make a chocolate layer :)  Let the bars cool in the pan before cutting them into 16 pieces.  I like them smaller, but you can cut them into 8 pieces if you prefer.  Store in refrigerator or wrap individually and store in the freezer!

HONEY NUT GRANOLA (slow cooker)

INGREDIENTS:
2 1/2 cups of rolled oats
3/4 cup raw almonds (divided in half)
Handful of crushed up walnuts-optional
1 tsp cinnamon
dash of salt
dash of nutmeg
1/4 cup honey (or maple syrup)
1/4 cup coconut oil
1 tablespoon of brown sugar - optional
1 tsp vanilla

DIRECTIONS:
1. Spray the slow cooker with cooking spray then add oats.
2. Grind half of the almonds into fine crumbs in a blender/food processor then add to slow cooker.  Grind the rest into medium chunks and add to slow cooker.  I added some crushed up walnuts as well at this point. 
3. Sprinkle with cinnamon, salt, and a dash of nutmeg. Mix well. 
4. Melt the coconut oil in the microwave.  Then whisk in honey, vanilla and brown sugar.  Pour mixture over the oats and stir until evenly coated.
5. Leave the lid off slightly and cook granola for about 2 hours on low, stirring every 30 minutes until granola is evenly golden.  Then spread granola onto sheet of aluminum foil to cool.

HEALTHY GRANOLA

Mix together:

1 cup of oats
cinnamon to taste
dash of nutmeg
1 tsp of coconut oil
tablespoon of maple syrup
tablespoon of brown sugar
handful of almonds
handful of craisins

Spray a baking sheet with cooking spray and bake in 300 degree oven till crispy.  About 15-25 minutes.

So much better than store bought granola that is LOADED with sugar. Enjoy!

PUMPKIN GRANOLA BARS WITH CHOCOLATE

INGREDIENTS: (upper right picture)
3 1/4 cup oats
3/4 tsp pumpkin pie spice
3/4 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
1/2 cup pumpkin puree
1/2 cup applesauce
1/3 cup honey
1/2 cup 85% dark chocolate broken into pieces
1 tsp vanilla

DIRECTIONS:
1. Preheat oven to 350 degrees and grease an 8x8 pan.
2. Combine oats, spices and salt. Set aside.
3. Whisk pumpkin, applesauce, honey and vanilla until smooth.  Pour over the oats and stir well. Stir in the chocolate.
4. Press into the pan and bake for 25-30 minutes.  Let cool for 5 minutes on wire rack, cut, then remove from pan and let cool.  Makes 12 bars!
